Argentinian Asado

Asado is a selection of slow-roasted meats, typically beef and pork, served with chimichurri and salsa criolla sauces. The meal can start with a choice of Achuras, or offal: blood sausage, chitterlings, kidneys, liver and sweetbreads along with Chorizo sausage and grilled provoleta cheese. The main course of grilled beef and pork is never marinated, but heavily seasoned with parrillero salt. The meat in Argentina is usually cooked well-done.
