Asado is a selection of slow-roasted meats, typically beef and pork, served with chimichurri and salsa criolla sauces. The meal can start with a choice of Achuras, or offal: blood sausage, chitterlings, kidneys, liver and sweetbreads along with Chorizo sausage and grilled provoleta cheese. The main course of grilled beef and pork is never marinated, but heavily seasoned with parrillero salt. The meat in Argentina is usually cooked well-done. Order jugoso for medium-rare, bien jugoso for rare or vuelta y vuelta for blue, which is blood rare. - AsNotedIn
