Tequila

Tequila is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 km (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the central western Mexican state of Jalisco. While any tequila can be drank straight or used to create cocktails, the differenct types have their best uses. Look for one with 100 percent on the label.

Silver tequila or blanco, the clear or white tequila, is unaged, clear and fresh, providing the purest form of tequila. This is the one that should be used for cocktails.

Rested (reposado) tequilas are aged in wooden containers to enhance flavor. Reposado has been rested at least two months resulting in a tan, more mellow overall drink.

Anejo tequila has been are aged in wooden containers for at least one year and up to three years. The aging process generally imparts a golden color. Drink Anejo straight or on the rocks.

Gold or joven (young) tequila is usually cheap tequila that has been artificially aged with the addition of grain alcohols and caramel color. Primarily made for the export market, Gold tequila should be avoided.
