Paprika Chicken

We left in pretty good time, and came after nightfall to Klausenburgh. Here I stopped for the night at the Hotel Royale. I had for dinner, or rather supper, a chicken done up some way with red pepper, which was very good but thirsty. (Mem. get recipe for Mina.) Paprika Chicken is a classic Austrian-Hungarian dish of chicken pieces baked with onions, Noble Rose paprika, tomatoes, green pepper, sour cream and heavy cream. Using both sour cream and heavy cream is old fashioned, modern recipes tend to omit the heavy cream. When in Hungary, garnish with plenty of sour cream. - Phantom
