Paprika Chicken

We left in pretty good time, and came after nightfall to Klausenburgh. Here I stopped for the night at the Hotel Royale. I had for dinner, or rather supper, a chicken done up some way with red pepper, which was very good but thirsty. (Mem. get recipe for Mina.) Paprika Chicken is a classic Austrian-Hungarian dish of chicken pieces gently simmered with onions, Noble Rose paprika, tomatoes, green pepper, sour cream and heavy cream, yielding a rich, brick-red sauce that defines the country's home-style cooking. Using both sour cream and heavy cream is old fashioned, modern recipes tend to omit the heavy cream. When in Hungary, garnish with plenty of sour cream. - Phantom
