A steak is a good quality slice of beef, typically portioned for one person and suitable for quick cooking. Classic beef steaks include filet mignon, porterhouse, ribeye, strip, T-bone and top sirloin. Many similar cuts of meat from other animals, such as bison, buffalo, sheep and pigs along with such large fish as marlin, shark and swordfish, are also called steak.
Cook most beef steaks by searing the meat on a very hot cast iron pan on each side for 2 to 5 minutes, let stand for 10 minutes. The best seasoning for steak is salt. Make a quick sauce by melting butter in the pan of deglazing it by adding wine or other liquid, scrape to dissolve browned food particles on the pan and allow the liquid to reduce. - AsNotedIn
