Jiaozi are Chinese-style dumplings of wonton wrappers stuffed with pork and cabbage while Gyozas are Japanese-style dumplings of pork and cabbage wrapped in wontons. Jiaozi are the original, where Gyoza became popular in Japan after World War II.

Gyoza are usually made from ready-made wrappers that are thinner and smaller than their Chineese counterparts. The filling is Gyoza more finely textured, making a more delicate dumpling. - AsNotedIn
