Loin Roast or Pork Chops: Cut from the central eye of the loin — the primary muscle of the primal — this section yields two classic forms. Left whole, it becomes a Loin Roast: sliced crosswise, it produces traditional Pork Chops.

Pork Ribs: Positioned directly beneath the loin muscle and attached to the spine, these ribs form the curved bones left behind when the loin is removed from the rib cage. This rack becomes the familiar baby back ribs.

Tenderloin: A separate, smaller, and exceptionally tender muscle tucked along the inside of the backbone at the rear of the loin.
