Sweet Potato Cones are a seasoned, baked sweet potato side dish shaped into a cone, either by cutting the tuber crosswise or by molding mashed sweet potatoes into a conical shape. We have identified two American recipes from the early twentieth century that describe the preparation of sweet potato cones. We have also encountered references to mashed sweet potatoes served in cone shapes on school cafeteria menus, though the specific ingredients used are unknown. Likewise, the exact recipe for the Sweet Potato Cones served at the King George and Queen Elizabeth White House Banquet has not been found. - AsNotedIn
One of the simplest is a sweet potato cone - or pineapple, as it has been called. The mashed potato is seasoned, moistened slightly with cream, butter, and beaten egg, and gathered into an oval form. This is placed on end, made a trifle smaller toward the top, and indented over the surface with a knife or spoon. It may then be placed in the oven and browned slightly, or at least to keep hot until everything else is ready, when it is garnished with parsley or cress. - Home Science Magazine, Anna Barrows, October 1903
Select long, straight sweet potatoes, pare and cut in halves crosswise, making two cones about three or three and one-half inches long. Boil in salt water until they can be pierced with fork, then roll in granulated sugar and fry in butter on all sides until a golden brown. Serve with cone standing on its base, one for each plate. - Attractive Menus, Harriet Warner, 1916
