A Pizza Puff is a deep-fried Chicago pizza pocket chimichanga-thing: standard American pizza toppings like red sauce, ground sausage and mozzarella sealed inside a pocket made by a folded tortilla and deep-fried until crisp. Created in 1976 by Warren Shabaz of Iltaco Foods — old-school Chicago tamale makers — the pizza puff quickly became a staple side dish at hot dog stands and Italian beef joints across the city.
