Hollandse nieuwe is herring, pickled in brine. To be true Hollandse nieuwe, it needs to be caught between May and July and contain at least 16% fat. The fish are typically served covered in chopped raw onions with a few sliced gherkins (a small pickle). Most people eat the fish, cut into small pieces, using the toothpick (with a little Dutch flag).
