Down the Hatch

Hollandse nieuwe is herring, pickled in brine. To be true Hollandse nieuwe, it needs to be caught between May and July and contain at least 16% fat. The fish are typically served covered in chopped raw onions with a few sliced gherkins (a small pickle). Most people eat the fish, cut into small pieces, using the toothpick (with a little Dutch flag). Go all out, grab the fish by the tail, coat it with the onions, toss back your head and gulp the whole thing down. Oh, yeah, now follow that with a large Dutch beer. - Phantom
